Our legacy is rooted in Galatas, Aetolia-Acarnania, Western Greece, where the Evinos River meets the limestone slopes of Mount Varassova. Here, maritime humidity and mountain cooling converge to shape a rare microclimate, the one that gives our groves their distinctive phenolic depth and character.

The land does not simply produce here, it asks to be understood.

Our family tend these trees, learning that the Aether is not something to be taken lightly, but something to be protected with reverence, patience, and precision.

They safeguard the grove with ancestral knowledge, ensuring that the raw material remains uncompromised from the very beginning.
